Remember to eat a salad every night.

When cutting up lettuce, cut up 2 or 3 heads at a time. The salad spinner is your best friend! Put the salad into a large bowl with a tight fitting lid and use paper towels daily to keep the lettuce dry.

Another thing I like to do is to cut up all my favorite commonly used veggies (except tomatoes) and mix them together in a sealed container. Then when it's time to put that salad together, all I have to do is throw my pre-cut greens in the bowl, and toss in those pre-mixed and pre-cut veggies. Voila! A complete salad in seconds! It can be a bit time consuming in the beginning, on the day your prep everything, but oh the time you'll save in the long run!

Be creative with those salads. Here's some ideas for things to add to your lettuce:

1. Pecans, apple slices, and tomatoes.
2. Kidney beans, corn, and veggies.
3. Try putting tuna fish on top of your salad.
4. Cranberries, sunflower seeds, and veggies make an interesting combo.
5. How about some sliced almonds and avocados!

 Use your imagination.  Variety is the spice of life!
